How those different metering modes work

I have often wondered about the different metering modes, particularly the difference between evaluative and centre weighted average. The manuals don't explain it well at all.

I did a blog on metering modes (http://desmond-downs.blogspot.com/2010/01/metering-modes.html) as well , weighted toward Nikon matrix metering of course :)
