I am David live in Barossa Valley SA.
I also enjoy fishing & Boating
Looking to buy a new camera and I'm sure I can find plenty of advice here.

Hello David and Welcome to AP. Cameras they are all good does not matter which Brand you buy really.
You need to go into a shop and get the feel of them and find something you feel comfortable with when holding it.
Some camera may be too small for your hands others may be too large..
Lenses well we can help with them, you tell us what you want to shoot and the Members will suggest different brands and models.
Start a post of the Camera/Lens/Gear Talk Forum you will get plenty of help there.

Welcome David,
I guess we could help suggest some cameras if you can help us by letting us know what type of photos you want to take... i.e. Landscapes, Portraits, Sports...etc
Do you have a budget and if so what is it?
There are a number of different cameras out there and most will do a good job, but some will do things better than others. The main thing I would suggest is a quality lens for the type of photos you wish to take, then a camera to match that lens.
